Victorian ice cream, Italian style. The ice-men worked out of Saffron Hill, starting around 4am to mix and freeze their ices in local milk shops before heading out to sell them for a halfpenny. The 'raspberry' ones were mostly sugar coloured with cochineal, with no actual fruit involved. The sellers were canny with money. They'd keep their gold in a secret pocket and show customers a purse of pennies, and many saved enough to spend the winter back in Italy. Taken by John Thomson in 1877 for Street Life in London.
