Mr Baylis ran a cook-shop on Drury Lane that was said to have been going for over a century, and was once a haunt of the highwayman Jack Sheppard. He took in men just out of prison, but they couldn't be photographed without risking their new jobs, so the man at the door is Ramo Sammy, the 'tam-tam man'. Baylis had quite a story himself: errand boy, valet, photographer, then seven years as a policeman. A pudding here cost a penny. John Thomson took this in 1877 for Street Life in London.
